This golden-colored Sylvaner comes from four parcels in Mittelbergheim, two of which are located on the Zotzenberg Grand Cru terroir. It develops notes of herbs and yellow pome fruits, pears and quinces. On the palate, its saline flavors give it a lovely liveliness.
A sylvaner that goes just as well with traditional dishes - snails, sauerkraut, baeckeoffe, jambonneau - as it does with fish, raclette or asparagus...
These old Sylvaner vines are located on the clay-limestone slopes of Mittelbergheim and partly on the marl-limestone terroir of Grand Cru Zotzenberg. Grapes harvested on September 18, 2023. Certified organic production.
Spontaneous fermentation using indigenous yeasts. Malolactic fermentation carried out. Aged on lees for 8 months in tuns. Light sulfiting of 10 mg/L before bottling. Bottling in April 2024.
Serve chilled at 8-10 degrees.
