The Bonnet-Ponson vineyard covers approximately 10 hectares spread across the Premier Cru villages of Chamery, Vrigny and Coulommes-la-Montagne, all located in the "Petite Montagne" of the Montagne de Reims. The soils combine limestone, clay, sand and chalk, offering chalky or clay-limestone subsoils that give the Pinot Noir, Chardonnay and Pinot Meunier grapes their typical minerality, freshness and complexity. Thanks to this mosaic of terroirs, varied exposures and diverse soils, each plot brings its own specific characteristics, allowing the house to play on balance, density and tension, and to best express the diversity of Champagne while maintaining a consistent signature.
Since 2013, Bonnet-Ponson has been cultivating its entire vineyard using environmentally friendly methods, organic farming, abandoning synthetic pesticides and herbicides, using plant preparations, liquid manure and infusions, maintaining active biodiversity in the vines, and ploughing the soil superficially to aerate the earth and encourage deep rooting. When it comes to winemaking, the estate focuses on gentleness and respect for the fruit. Plot-by-plot pressing, fermentation with indigenous yeasts, a choice between oak barrels, stainless steel vats or concrete vats depending on the origin of the grapes, very little or no sulphites, no filtration, and prolonged ageing on lees to develop structure and complexity. For non-vintage cuvées, Bonnet-Ponson uses a "Perpetual Reserve", incorporating 35 to 45% of the new harvests into the reserve wine each year, thus ensuring consistency and depth of style. All of these practices illustrate the house's desire to produce lively, authentic champagnes that are deeply rooted in their terroir, respectful of nature, and consistent over time, an artisanal and committed approach that is faithful to the family's values...
The Bonnet family has been growing grapes in Chamery in the Montagne de Reims since 1862, but it was at the beginning of the 20th century that one of their ancestors, Jules Bonnet, made a strong statement about the estate's independence. In 1902, he had a 5,500 kg wooden press installed, powered entirely by human strength, a bold move for the time, even before electricity reached the village. This press, operated by the arms of the grape pickers, embodied a simple philosophy: to control the entire chain, from the vine to the bottle, and to assert the freedom to produce in one's own way.
