"Balanced between roundness and liveliness, this characterful cuvée displays a beautiful aromatic complexity and a presence on the palate that makes it ideal for numerous gastronomic pairings in addition to the simple pleasure of an aperitif."

Composition

  • - 40% Pinot Noir, 30% Chardonnay, 30% Meunier
  • - 40% reserve wines, a blend of previous harvests known as “Réserve Perpétuelle

Vineyard and terroir

35 parcels located on the Premier Cru terroirs of Chamery, Vrigny and Coulommes la Montagne. Average vine age 35 years, different soil types: siliceous sand, limestone and clay.

Winemaking

First fermentation in stainless steel tanks (85%) and oak barrels (15%). Malolactic fermentation. Aged on fine lees for 8 months before bottling. No filtration, minimum use of sulfites (less than 25 mg/l). Bottle ageing of at least 5 years. No dosage: 0 g/L

Passed down through six generations, it has expanded over time before taking its current form in 1956 following the union of the Bonnet and Ponson families.
