Plots located on the Premier Cru terroirs of Chamery, Vrigny and Coulommes-la-Montagne. Varied exposures allowing for a bright and taut style. Vines averaging around 30 to 40 years old. Soils combining siliceous sand, calcareous clay and chalky subsoils rich in fossils, bringing finesse, maturity and salinity.
Natural and minimally interventionist vinification, without fining or filtration. First fermentation in barrels used for several wines, between 228 and 400 litres, with indigenous yeasts from the estate's vines. Malolactic fermentation carried out. Aged on fine lees for around 8 to 9 months before bottling. No sulphites added during vinification, or minimal addition at bottling. No dosage, for a pure expression of the terroir.
Founded in 1862 by Grégoire Bonnet in Chamery, Bonnet-Ponson is one of the region's first récoltants-manipulants or winegrowers-producers. Passed down through six generations, it has expanded over time before taking its current form in 1956 following the union of the Bonnet and Ponson families.
