The far side of the moon

The story of Bruyère-Houillon begins in 2011, with just 75 ares of vines in the Arbois lieu-dit Les Tourillons. From this modest starting point, Renaud Bruyère and Adeline Houillon gradually built up their estate to around 4.5 to 5 hectares, today spread across Pupillin, Arbois and Montigny-lès-Arsures. The vineyards are planted with the classic Jura varieties, including Ploussard, Trousseau, Chardonnay and Savagnin, and reflect the diversity of soils and exposures typical of the region.

Deeply rooted in Pupillin, a village historically associated with Ploussard, the domaine remains intentionally small in scale. Work in the vineyards follows biodynamic principles, applied without certification but with a strong focus on soil life, balance and long-term sustainability. All vineyard work is carried out by hand, in line with the steep, fragmented nature of the parcels.

In the cellar, the same philosophy of restraint applies. Fermentations are spontaneous, with indigenous yeasts, and the wines are made without fining or filtration and with little to no added sulfur. The approach is pragmatic rather than dogmatic, aiming above all to preserve the character of each site and vintage. Some cuvées, particularly in red, involve semi-carbonic maceration, contributing to the freshness and delicacy that define the domaine’s style.

Both winemakers bring strong roots in the Jura. Adeline Houillon is the sister of Emmanuel Houillon of Domaine Pierre Overnoy, where she also trained, while Renaud Bruyère gained experience with both Overnoy and Stéphane Tissot before establishing the domaine. These formative influences are often cited to explain the precision and clarity of the wines, even as the couple has developed a distinct identity of their own.

Today, Bruyère-Houillon stands as a quintessential expression of Pupillin: small-scale, quietly exacting, and deeply connected to place. Their wines, produced in very limited quantities, are sought after for their purity, energy and faithful expression of Jura’s unique terroirs.

Pupillin, at the heart of the Jura

Often referred to as the “world capital of Ploussard,” Pupillin holds a singular place within the Jura. Here, the local spelling Ploussard is preferred over the more widely used Poulsard, reflecting both tradition and a strong sense of identity tied to the village. This delicate red grape finds an ideal home on Pupillin’s steep slopes of red marl, where it develops its characteristic pale color, lifted aromatics and fine, earthy structure.

Beyond its terroir, Pupillin has become a defining village in the modern history of Jura wine. Next to Adeline and Renaud, it is also home to influential growers such as Pierre Overnoy, Emmanuel Houillon and the Bornard family, whose work has helped shape the region’s move toward low-intervention practices. Through their wines, Pupillin stands not only as a place, but as a benchmark for a style rooted in precision, transparency and a deep respect for both grape and origin.
