Natural precision

The Stroebel family has lived in Champagne since the 1960s, when they settled there after the war. The first vines were planted by Timothée's grandfather in Villers-Allerand. After studying oenology in Beaune and working in Burgundy for several years, Timothée returned to his roots and began producing his own wines from the family vineyards in 2005. He stopped using herbicides in 2003, returned to manual labour in the vineyard, and obtained organic certification in 2014. This trajectory shows a deliberate, thoughtful and patient return to viticulture that respects living organisms.

The vineyard covers several hectares around Villers-Allerand, spread over varied soils, including clay, sand and chalk, offering a beautiful range of terroirs. Some of the plots are dedicated to Pinot Meunier, including old vines over 50 years old, while others are planted with Pinot Noir or Chardonnay. Timothée treats each plot with great attention to biodiversity, sometimes even introducing sheep to graze between the rows in order to stimulate soil life and respect the natural balance.

In the cellar, the philosophy is clear: respect for the fruit, natural vinification, minimal intervention. Fermentation is carried out with indigenous yeasts, the wines are neither fined nor filtered, often without dosage, the use of sulphur is kept to a minimum, and ageing is carried out in barrels or large casks to allow the wine to express itself freely. Certain cuvées, such as the highly representative Triptyque, blend Pinot Noir, Pinot Meunier and Chardonnay from different terroirs to deliver a balanced, deep and lively wine.
