The wine is a blend of the 2017 and 2018 vintages, combining Pinot Noir, Pinot Meunier and Chardonnay from old vines over 50 years old located around Villers-Allerand, a village classified as Premier Cru in the Montagne de Reims. The plots are planted on varied soils of sand, limestone and clay, which bring aromatic complexity, tension and minerality.
Vinification is carried out naturally, with spontaneous fermentation in old oak barrels, without filtration, cold stabilisation or fining. The wine is aged in large barrels to preserve its subtlety and texture. It remains on its lees, without dosage, in line with Timothée Stroebel's minimalist philosophy.
