This wine is 100% Pinot Noir, made from old vines over 50 years old, cultivated manually on plots exposed to the sun in the Premier Cru village of Villers-Allerand, in the Montagne de Reims. The soil is chalky, rich in limestone, typical of the clay-limestone terroirs of the area, bringing freshness, minerality and tension.
The vinification is carried out naturally, with spontaneous fermentation using indigenous yeasts, vinification and ageing in old oak barrels, without filtration or stabilisation, and very little sulphur when used. After racking, the wine is bottled as Brut Nature (0g/l dosage), which allows the purity of the fruit and the identity of the terroir to fully express themselves.
