Prosecco defieing convention

Located in the hills of Valdobbiadene, in the heart of the Conegliano-Valdobbiadene DOCG, Ca’ dei Zago is a family estate whose history dates back to 1924. Over five generations, the Zago family has cultivated these steep vineyards, preserving a culture of hillside viticulture rooted in manual work and long-term continuity. 

Today, the estate is run by siblings Christian and Marika Zago, who represent the current generation. After gaining experience abroad and studying viticulture, they returned to Valdobbiadene with a clear intention: to reconnect with older farming traditions while refining them through a more conscious and demanding approach. 

The domaine remains deliberately small, with around 5 to 6 hectares of vines spread across steep, sun-exposed slopes. These sites, often too steep for mechanisation, require entirely manual work and are planted on complex soils combining clay, sand and flint, contributing to the tension and depth of the wines. 

Farming has always been central to the identity of Ca’ dei Zago. The vineyards have never seen chemical fertilisers or herbicides, and since around 2010 the estate has moved fully into biodynamic practices, focusing on soil vitality, biodiversity and natural balance. 

In the cellar, the philosophy follows the same logic of minimal intervention. Fermentations occur with indigenous yeasts, without correction or filtration, and the wines are bottled by gravity, often according to lunar cycles. The domaine is particularly known for its col fondo Prosecco, refermented in bottle and left undisgorged, a traditional style that predates modern sparkling methods and highlights texture, complexity and authenticity. 

Far from the industrial image often associated with Prosecco, Ca’ dei Zago represents a return to a more agricultural and expressive vision of the appellation. Through precise farming and restrained winemaking, the estate produces wines that are both deeply rooted in their landscape and quietly radical in their simplicity.

Col fondo

Col fondo represents the historical expression of Prosecco, standing in contrast to the clean, polished style most commonly associated with the category today. Rather than undergoing a controlled second fermentation in tank followed by filtration, the wine completes its fermentation in bottle and is left undisgorged, with the lees remaining inside. This results in a naturally sparkling wine that is often slightly cloudy, with a finer, less uniform mousse and a more textural profile.

Compared to classic Prosecco, typically defined by its clarity, aromatic immediacy and soft, fruit-driven profile, col fondo wines tend to show greater depth and structure. The presence of the lees brings subtle savory and yeasty notes, alongside fresher, more restrained fruit and a drier finish. The overall impression is less about brightness and polish, and more about complexity, tension and a closer expression of both grape and place.
