Ca' dei Zago is not just the champion of col fondo. With this Dosaggio Zero made using the traditional method, the estate demonstrates technical mastery and ambition that far exceed expectations. Unlike col fondo, the traditional method involves a second fermentation in the bottle followed by disgorging, resulting in a clear wine, free from sediment, with very fine, integrated bubbles. Zero dosage means that no sugar is added at the time of disgorging, which requires perfect ripeness of the grapes and impeccable work in the vineyard.

The result is a dry, taut sparkling wine with great minerality, featuring notes of fresh brioche, citrus, chalk and green apple. The palate is finely crafted, long and beautifully lively, with a clean, briny finish. For lovers of natural champagne and uncompromising bubbles. A wine to serve at the table, with oysters, delicate fish or hard cheeses.
