This crémant is made from juice from the 2023 harvest, to which juice from 2024 has been added. It has a pale yellow colour and very fine bubbles. The nose evokes exotic fruits, pome fruits and citrus fruits. The attack on the palate is lively and salty, in keeping with the nose, then rounds out without any sweetness or heaviness.
This crémant can be served as an aperitif or throughout a meal. It pairs well with oysters, fish, foie gras, cheese, or apple and quince tarte Tatin, among other dishes.
This crémant is a blend of Auxerrois, Chardonnay, and Pinot Gris grapes from the clay-limestone terroirs of Mittelbergheim. The grapes were sorted in the vineyard and harvested at maturity, around 12 degrees of potential alcohol. Certified organic production.
After a year of aging in vats, bottling took place at the beginning of the 2024 harvest with the addition of fresh grape juice from the new harvest and a yeast starter for the second fermentation in the bottle. No dosage.
Serve chilled, at 8-10 degrees.
