... the mice are dancing! Pinot Gris of maceration with fruity notes and smoky hints of the Alsatian terroir
Nine days of maceration give this wine a beautiful clear color with hints of rose jelly. The nose, still a bit closed, opens up with aeration to reveal vegetal and peaty notes. The palate, initially very smooth, then gains depth and offers a nice concentration of warm flavors.
This wine, with no added sulfur, pairs well with classic home-style dishes such as roast veal or pork tenderloin, as well as pasta with mushrooms or Asian cuisine.
From the calcareous sandstone soils of Stierkopf in Mutzig. Grapes harvested on September 13, 2022. Certified organic production.
Made from whole bunches macerated and fermented in their own juice for 9 days. Natural fermentation using indigenous yeasts. Aged on lees for 8 months in casks and vats. Bottled in April 2024. No added sulfites.
Serve chilled at 10-12 degrees.
