Character

This Pinot Noir, with its sparkling ruby colour and floral, spicy nose, is a blend of grapes from several plots in Mittelbergheim. Fermentation of whole bunches (2/3) in first-press juice (1/3) gives it slightly earthy flavours without excessive tannins. A wine with lovely salinity, fluid and invigorating.

This beautiful cuvée can be paired with all kinds of dishes: tapas, charcuterie, grilled meats, stuffed tomatoes, pasta dishes, etc.

The land and the vine

Made from a blend of all our Pinot Noir plots planted on the clay-limestone soils of Mittelbergheim. Certified organic production.

Vinification

15 days of semi-carbonic maceration of whole grapes on juice. Aged for 8 months in stainless steel vats. Light sulphiting during fermentation. Clarification filtration on cellulose plates. Bottling: April 2025

Serving

Serve chilled, at a temperature of 12-14 degrees. This Pinot Noir has a protein cloudiness that we recommend stirring before opening the bottle. This sediment does not alter the taste of the wine in any way.
