This wine is a 100% Chardonnay harvested in 2022 from the "Les Cumines" plot, a locality in the Montagne de Reims, in the village of Villers-Allerand, where the vines date back to 1964. Timothée Stroebel cultivates his vines naturally, using grass cover and traditional soil cultivation methods to preserve the balance of the soil and the health of the vines.
In the cellar, vinification follows a non-interventionist approach: spontaneous fermentation with indigenous yeasts, no filtration or fining, no cold stabilisation, with minimal use of sulphur if necessary. The wine is aged in large barrels to allow it to mature gently without masking the fruit. The result is a still white Champagne, a "Coteaux Champenois", which expresses the minerality and finesse of its terroir, while remaining light, straightforward and refreshing.
At his estate in Villers-Allerand in the Montagne de Reims, Timothée Stroebel combines a strong desire to return to basics with family heritage, organic viticulture and natural winemaking.
