On the nose, it reveals an enticing bouquet of wild strawberries, raspberries and red cherries, mingled with hints of brioche, almonds and sweet spices. On the palate, the attack is lively and dynamic, the texture full-bodied and delicately spiced, combining salinity, minerality and richness, with a lingering impression of fresh red fruits...

Composition

  • - 50% Pinot Noir, 25% Chardonnay, 25% Meunier
  • - 5-10% Chamery rouge (Pinot Noir)
  • - 40% reserve wines, a blend of previous harvests known as “Réserve Perpétuelle

Vineyard and terroir

Parcels located on the Premier Cru terroirs of Chamery, Vrigny and Coulommes la Montagne. Average vine age 35 years, different soil types: siliceous sand, limestone and clay.

Winemaking

Aged on lees for 9 months in stainless steel vats (70%) and oak barrels (30%). Malolactic fermentation carried out. Red wine aged in 400L barrels. No filtration, minimum use of sulfites (less than 25 mg/l). Bottle ageing of 3 to 4 years minimum. Extra-brut dosage: 1.5 to 2.5 g/L, traditional liqueur.

Founded in 1862 by Grégoire Bonnet in Chamery, Bonnet-Ponson is one of the region's first récoltants-manipulants or winegrowers-producers. Passed down through six generations, it has expanded over time before taking its current form in 1956 following the union of the Bonnet and Ponson families. Now run by Cyril Bonnet, the house remains deeply attached to its artisanal and family identity, continuing to work independently in the Champagne tradition...
