Petit Mélange opens with a pale colour and delicate bubbles. The nose evokes green apple, pear, white flowers and fresh herbs, with a touch of citrus and a hint of iodine. The palate is lively and straightforward, marked by a salty minerality and clear tension. The fruit remains crisp, with a finish that lingers on lemon and wet stone with a slight bitterness. The grapes come from plots located around the villages of Chamery, Vrigny and Coulommes-la-Montagne, in the Petite Montagne de Reims region. These soils combine clay, limestone and chalk, giving the wine finesse, salinity and minerality. Harvested late, the grapes are picked on the last day of the harvest and then pressed together, giving it its name ‘Petit Mélange’.
Pressing and fermentation are carried out together for all grape varieties. Fermentation and initial ageing take place in a 10hl sandstone egg, allowing for gentle and natural micro-oxygenation. No sulphur added, no filtration, no fining. Brut Nature (0g/l dosage). After bottling, usually in the spring following the harvest, the wine ages on lees for around 36 months before disgorging.
Founded in 1862 by Grégoire Bonnet in Chamery, Bonnet-Ponson is one of the region's first récoltants-manipulants or winegrowers-producers. Passed down through six generations, it has expanded over time before taking its current form in 1956 following the union of the Bonnet and Ponson families.
