Parcels located on the Chamery Premier Cru terroirs, lieux-dit "les Vigneules", "les Spectres" and "les Caquerets", facing south-east. Average age of vines: 30 years. Different soil types, clay-limestone soils strewn with rock fragments, sandy subsoils rich in fossilized shells.
Entirely vinified without sulfites, no fining or filtration. First fermentation in used barrels (228 and 400 L) with indigenous yeasts (pied de cuve made from estate vines). Malolactic fermentation carried out. Aged on fine lees for 9 months before bottling. Dosage: 0 g/l.
Founded in 1862 by Grégoire Bonnet in Chamery, Bonnet-Ponson is one of the region's first récoltants-manipulants or winegrowers-producers.
