SAU 2023 is a pure Sauvignon Blanc made from schist and clay soils, macerated on the skins for around ten days. The result is a vibrant, juicy and energetic orange-white wine with an expressive nose of tropical fruits, white flowers and fine herbs. Jérôme Saurigny has been a winegrower on the slopes of Coteaux du Layon in Anjou since the mid-2000s, after studying oenology in Bordeaux and working as a cellar master in Pomerol. Inspired by his discovery of ‘natural’ winemaking techniques through pioneers such as Patrick Desplats and Sébastien Dervieux at Domaine des Griottes, he founded his own estate in 2007, deciding to abandon chemical inputs and produce wines without additives or added sulphites, using indigenous yeasts. With around 6.5 hectares of vines, he cultivates the Loire's emblematic grape varieties, including Chenin Blanc, Sauvignon Blanc, Cabernet Franc, Gamay and Grolleau, which he works by hand, often using biodynamic practices, and vinifies into natural, often unfiltered wines that reflect the terroir and the expression of the grape.
