This Crémant is a blend of Auxerrois, Pinot Gris and Pinot Blanc, the traditional triumvirate of Alsace sparkling. The base wine is aged in stainless steel before bottling, with refermentation started with the addition of frozen must. After an extended time on the lees before dégorgement, the result shows layers of orchard fruit, a touch of salinity and a pleasing snappy acidity. No sulphur added at any stage. Much like their maker, each cuvée bursts with energy.
