Pinot Blanc and Gewürztraminer from the certified organic Bannwarth estate in Obermorschwihr, Alsace, were pressed directly on the day of harvest, each variety separately. The Gewürztraminer had developed a beautiful noble rot at harvest time. After a few days of oxidation, the juice fermented in fiberglass tank through winter, then moved to the cellar in spring 2023, where it completed fermentation and remained in old barrels without topping up for two further years.

The light oxidation that developed was calibrated carefully, enough to add depth and structure, not enough to overwhelm the fragile character of the Pinot Blanc. The nose opens with white roses, jasmine, and unripe white peach; the richer, riper notes of Gewürztraminer appear gradually in the aftertaste, alongside linden honey and beeswax. The palate is saline and luminous, precise and complete.
