Chardonnay and Viognier from the certified organic vineyards of Domaine du Mazel in Valvignères were blended directly in layers in the estate's old wooden press, Chardonnay first, then Viognier, then Chardonnay again, and pressed slowly over four days with a single rebêche each day. The juice moved straight into old barriques, where it remained for one year and nine months until June 2025.
The 2023 vintage was not the most expressive year in Ardèche; aromas stayed discrete and defined by a fragile elegance. No rich southern fruit, no overpowering floral notes, just a hint of both, a beautiful saltiness, and a precise acidity that binds everything together. Time in barrel did its work, helping this wine find its own solid balance.
