Destemmed Grenache Noir from the hillside vineyards of Valgrand was macerated in the directly pressed juice of Cinsault from Domaine du Mazel. The maceration ran for just over nine months, an unusually long time, but a deliberate one. With cold arriving early in 2023, the decision was made not to press in the cold cellar and risk destabilising the wine. Instead, the grapes waited through winter until the cellar warmed again in spring 2024, when the décuvage finally took place.
The wine was pressed directly into barriques and spent another year there before bottling in June 2025. Its pale color is misleading. Behind it is a wine of real structure and richness, with richer tannins than the color would suggest, something closer in spirit to a Ploussard from the Jura than a typical Ardèche red. Aromas of dried cherry, pomegranate, and warm earth, with a silky and textured palate.
