Birichèn 2023 is a 100% Grechetto grown in the hills around Bologna, within the biodynamic farm of Al di Là del Fiume. Harvested early to preserve acidity, the wine reflects the estate’s focus on freshness, balance and connection to nature. 

After fermentation in stainless steel, the wine undergoes a natural refermentation in bottle using its own must, following the traditional ancestral method. Bottled unfiltered and with minimal sulphur, it develops a soft, lively sparkle and a raw, expressive character. 

On the nose, it shows white flowers, citrus and ripe orchard fruit. The palate is crisp and vibrant, with delicate bubbles, a dry profile and a clean, mouthwatering finish.
