Anthony Fonjallaz makes Sabré Sable from Chasselas grown organically on the Domaine du Chambet in Gy. The grapes are hand harvested and pressed directly as whole clusters, then fermented with indigenous yeasts before being bottled to finish its fermentation naturally through the ancestral method. No inputs are used, the wine is unfined and unfiltered, and no sulfites are added. This is a wine with no dosage or added sugar, fermented and bottled entirely on its own terms.

The result is a fresh and taut sparkling white with a natural, gentle fizz. Sitting between traditional classics and the more rock and roll cuvées in the range, it's a bottle built to open horizons for the curious while still satisfying seasoned natural wine drinkers. Certified Bio Suisse, and the ideal cuvée to share.
