Anthony Fonjallaz works with Mara, a grape born from Gamaret and Reichensteiner, grown organically on the Domaine du Chambet's Capite plot in Gy. The grapes are hand harvested and pressed directly as whole clusters, then infused over Mara's own pomace to build aromatic complexity and structure beyond what the short maceration alone would give. Fermentation happens spontaneously with indigenous yeasts, and the wine ages in stainless steel. No sulfites are added, and the wine goes unfiltered and unfined into the bottle.
The result is a fruity, gulpable rosé built for easy drinking, certified Bio Suisse and true to the Cuvées Libres spirit that defines the domaine's approach. Fresh, juicy, and unmistakably summer in a glass.
The Domaine du Chambet, located in Gy on the border with neighbouring France, is enjoying a second youth since the arrival of Anthony Fonjallaz, the fourth generation to cultivate the family estate.
