Anthony Fonjallaz grows this Chasselas on the Capite plot of the Domaine du Chambet, 1.7 hectares of reworked glacial moraine soils in Gy, on Geneva's left bank near the French border. The vines are farmed organically, and the wine is aged entirely in stainless steel to preserve freshness and let the grape express itself without oak influence.

The result is a lively, fresh white with sweet citrus aromas and a distinctly mineral character, true to Chasselas at its most classic. It sits right at the crossroads between traditional Swiss winemaking and the more adventurous cuvées in the Chambet range, making it equally at home introducing newcomers to natural wine and satisfying seasoned drinkers.
