Cidre de Fer is Jacques Perritaz's pure expression of the Fer apple, known in Germany as Bohnapfel, grown on old, untreated high stem trees around Fribourg and prized for its deep colour and tangy, tannic juice. Expect pear eau de vie, ash and iodine on the nose, alongside something baking, a fruit souffle dusted with powdered sugar as it browns.
