Brut de Rue is a pure juice cider from Jacques Perritaz's young orchard at Rue, blending around fifty different apple varieties, bitter, bittersweet and sour, pressed together in one field style cuvee. The result is layered and structured, with tannic grip balancing bright acidity and a mineral, saline edge. Fermented naturally with wild yeasts and bottled with a light deposit, it develops a gentle, foamy sparkle over time.
