Trois Pépins blends quince, pear and apple in equal parts on old, untreated high-stem trees around Fribourg. Pear brings roundness and minerality, apple lends tension, and quince gives that unmistakable floral lift. Expect pink flowers, hay, honey and white blossom on the nose, with a dry, saline, faintly tannic palate built on quince's astringency. This 2010 vintage is a true rarity, pulled straight from Jacques Perritaz's personal reserve, at just 6% alcohol. A grown-up, mineral cider built to linger...
