Force of Nature

2023, white, 75cl

CHF 32.00

Intensely straw-yellow with a nose of saffron, ripe orchard fruit and white flowers. The palate is generous and wide, carried by mineral salts and an energetic freshness that lingers long after the last sip. A true treasure of white Chautagne, equally at home cellared for years or poured on a whim before dinner...

More details...

Force of Nature comes from a 1.5-hectare plot of Altesse planted on quaternary glacial molasse soils threaded with limestone jets, on one of the steepest slopes of Corentin Houillon's estate in Chautagne. Altesse, also known as Roussette, is Savoie's noble white grape, and here it is treated with the patience it deserves. The wine ferments spontaneously in old barriques with native yeasts, then ages for a full twenty four months, kept topped up on its fermentation lees the entire time, right through to bottling without any added sulphur.

That extended élevage is what gives Force of Nature its depth. Corentin describes it as equal in complexity to its expression, a wine built as much for the cellar as for the fleeting pleasure of an apéritif. Saffron and fruit notes emerge alongside a broad, ample palate, all wrapped in the smoky, saline signature that runs through his whites. It stands as one of the domaine's flagship cuvées, a genuine treasure of white Chautagne, and pairs beautifully with aged mountain cheeses like Comté, where its minerality and citrus lift meet the cheese's nutty depth.

Corentin

A familiar face, that of Corentin Houillon. From 2015 to 2018 he worked at Domaine de la Ville de Morges in the Canton of Vaud, where he quickly made a name for himself in the Swiss wine scene. Since 2019, he has been working on his own in neighbouring Savoie, taking over a 5-hectare estate where all the iconic grape varieties of the region, Altesse, Jacquère, Mondeuse, Gamay and Pinot Noir, are grown...
