La Mailloche is an exceptional vineyard. Its deep grey Triassic marl, part of one of the oldest geological subsoils in the Jura, nourishes vines that are nearly 80 years old, whose roots reach deep into the earth to draw out a substance of rare density and complexity. Pressing is carried out entirely by hand, ensuring a gentle extraction that preserves the integrity of the grapes. The wine is aged in 700-litre casks, supplemented by a Burgundy barrel – a choice that gives the wine the depth of the large cask whilst imparting the finesse of Burgundy oak.
This Chardonnay stands out for its generous texture and pronounced salinity, a characteristic directly linked to the grey marl that gives it its distinctive iodine-like and mineral character. On the palate, it is full-bodied and long, with a salty finish that immediately calls for seafood. Oysters, scallops, rock fish, lobster: La Mailloche is made for the seaside table, or for dreaming that you are there.
