Le Trou'Side is Etienne Horbach’s red wine, and it perfectly embodies his philosophy: focusing on the essentials, allowing the fruit to express itself, and never forcing anything. The blend brings together several plots on limestone and clay-limestone soils, which gives the Trousseau a certain complexity despite its natural lightness. The winemaking is meticulous: twelve days of maceration to extract the fruit and colour without overloading the wine with tannins, followed by manual pressing in a vertical press to preserve its finesse. The wine is aged in vats during the winter months, in calm conditions, before being bottled by gravity during the summer.

The result is a delicate red, with notes of fresh cherry, raspberry and violet, a smooth, unobtrusive palate, natural acidity that lends liveliness, and a light, clean finish.
