Les Bruyères represents the other side of Jura Chardonnay, according to Etienne Horbach. The vineyard is planted on Lias limestone marl, a geological layer younger than the grey marl of La Mailloche, which produces wines with a different texture: more supple, more rounded, with a natural richness that coats the palate without ever feeling heavy. The vines are over 80 years old, an age reflected in the concentration and complexity of the wine. Pressing is done by hand, and ageing in Burgundy-style barrels imparts a subtle, well-integrated oakiness that highlights the wine’s richness without masking it.
The result is a silky Chardonnay, almost creamy on the palate, with aromas of fresh butter, hazelnut, lime blossom and very ripe white-fleshed fruit. The palate is opulent and refined, with a long, enveloping finish. This is a table wine made for large poultry dishes, white meats in sauce, sweetbreads, fine fish or any meal that deserves a white wine of great substance.
