The Chardonnay Villette is one of Etienne Horbach’s finest wines. The vineyard, planted on pure limestone soil, is cultivated with 35-year-old vines that draw nutrients from deep in the ground to produce a wine that is both concentrated and precise. The grapes are pressed mechanically and immediately, without maceration, to preserve the fruit’s freshness. Ageing is lengthy, spanning three full winters in oak, with regular topping up approximately three times a year to maintain the wine’s balance and prevent any oxidative drift. Racking in early summer 2025 precedes bottling by gravity, which preserves the wine’s texture and vitality without mechanical intervention.
The result is a Chardonnay with a beautiful duality: both mineral, with that characteristic limestone note that lends it structure, and fruity, with notes of ripe peach, hazelnut and white flowers. The palate is rich and full-bodied, with integrated acidity and a long, lingering finish. A white wine that suits every table and every occasion, from a gourmet aperitif to large cuts of white meat or mature cheeses from the Jura.
