Hautes Chèvres 2021 reveals a pale gold colour and fine, almost discreet bubbles. The nose combines ripe apple, stewed pear and sweet citrus fruits, joined by notes of wet chalk, light brioche and an immediate salinity. On the palate, the attack is lively, with crisp acidity and a beautiful chalky tension structuring the wine. The fruit remains pure, the texture straightforward and clean. The finish stretches out elegantly, with citrus zest and a touch of dry almond coming to the fore, highlighting great purity and finesse. A deep, invigorating champagne that is true to its terroir...
The Les Hautes Chèvres vineyards stretch across the eponymous locality on the slopes of Cumières, a Premier Cru village in the Marne Valley. The soil is clay-limestone, often rich in chalk, on moderate to exposed slopes, a demanding terroir but ideal for producing tension, minerality and racy expression.
Viticulture is entirely organic and carried out with care: manual or horse-drawn ploughing, strict respect for biodiversity, without herbicides or chemical treatments. Since the 1970s, the estate has been cultivating its vines with the utmost respect for the soil.
After manual harvesting, the must ferments with indigenous yeasts in neutral barrels, without the addition of chaptalisation sugar. The wine is aged for several months in barrels, followed by prolonged ageing on fine lees in the bottle. No fining or filtration, very limited use of sulphur, and no dosage, in Brut Nature.
Each step is designed to restore the identity of the place and the vintage. The low yield, perfect ripeness of the grapes and minimalist ageing produce a deep, lively, mineral wine of great purity, a terroir champagne to be enjoyed now or left to evolve quietly.
