Cumières 2021 has a light gold colour and fine, lively and persistent bubbles. The nose combines green apple, fresh citrus, light brioche and a delicate chalky minerality, sometimes underscored by a salty note. On the palate, the attack is clean, the acidity lively and the structure straightforward. The wine combines tension and freshness, with a salty and chalky personality that highlights the terroir. The finish is long and clean, with notes of wet stone, citrus zest and a touch of yeast. A clear, lively and elegant champagne, a Premier Cru that expresses the authenticity of Cumières...
Cumières 2021 is a blend of Chardonnay, Pinot Noir and Pinot Meunier from Premier Cru plots in the village of Cumières, in the Marne Valley. The estate has been farmed organically since 1971. The vines, some of which are over 70 years old, are cultivated without chemical treatments, using ploughing, natural fertilisers and manual soil cultivation, which promotes biodiversity and the expression of the terroir.
After manual harvesting, the grapes are gently pressed using a traditional press. Fermentation takes place in neutral oak barrels, with indigenous yeasts, without chaptalisation, filtration or fining, and with very limited use of sulphur. Ageing on lees lasts around 18 months before disgorging as Brut Nature (0g/l). This minimalist style aims to restore the purity of the fruit and the chalky minerality of the Cumières soil. The magnum format magnifies this style, as the second fermentation develops more slowly, refining the texture, enhancing the aromatic harmony and offering a longer ageing potential than the standard bottle.
The terroir of Cumières, with its south/south-east facing slopes and clay-limestone soils with a chalky subsoil, gives the wine tension, elegance and a dry stone minerality. The age of the vines, the exposure and the organic cultivation contribute to the depth and aromatic finesse. The result is an authentic and precise terroir champagne, a beautiful expression of what the Marne Valley has to offer when worked with care.

Based in Cumières, the family has been practising organic farming since the 1970s, long before the method became commonplace in Champagne. This pioneering choice, combined with meticulous winemaking, produces rare, pure champagnes that are deeply influenced by their terroir...
