Les Vignes de Mon Oncle 2021 has a bright pale yellow colour with fine bubbles. The nose offers notes of ripe apple, juicy pear, candied citrus fruits, white flowers and a subtle hint of brioche, sometimes enhanced by a stony mineral nuance. On the palate, the attack is lively and clean, with refreshing acidity and a fluid yet textured mouthfeel. Les Vignes de Mon Oncle 2021 is a blend of the estate's three classic grape varieties, Chardonnay, Pinot Noir and Pinot Meunier, from a plot located in Cumières, a Premier Cru village in the Marne Valley, recently acquired by Vincent Laval from his uncle. The vineyard benefits from south-south-east facing slopes, on chalky and limestone soils typical of the region, which give the wine minerality, freshness and tension.
Viticulture is carried out according to the principles of organic farming in order to preserve the balance of the soil and the vitality of the vines. In the cellar, vinification is carried out with indigenous yeasts, fermentation and ageing in old or neutral barrels, without fining or filtration, and with very little sulphur. The wine has been aged on lees for several months. The 2021 blend is bottled as Brut Nature (0g/l dosage) in order to best reflect the purity of the fruit and the expression of the terroir.
