Homok is one of the Koppitsch estate's Fun Wines, a category built entirely around joy and ease of drinking. The name means sand in Hungarian, a nod to the vineyard site of Seefeld, on the western edge of Neusiedl am See where the last solid ground gives way to the marshes of the lake. The soil here is sandy topsoil over limestone, flat, windy and hot, sitting in the haze that rolls off the water, conditions that push the grapes toward intense, expressive aromatics.

The blend brings together Grüner Veltliner, Weissburgunder and Sauvignon Blanc from vines planted between 1978 and 2018 across seven small plots totalling under two hectares. Everything is processed by hand in the Koppitsch backyard, whole bunches pressed directly with no additives and no temperature control at any stage. The juice ferments spontaneously in a mix of stainless steel, large acacia and oak foudres and fiberglass tank, with the three grape varieties largely co-fermenting together rather than blended after the fact. The wine matures on its gross lees for six months without fining or filtration, and the components are only properly blended shortly before bottling.

The result is joyful and a little wild, exactly as intended. Expect a hazy, textured glass full of citrus, tropical fruit and orange peel, with salty mineral notes and a soft, rounded finish. How you drink it is entirely up to you. Give the bottle a good shake to wake up the lees and bring out the fullest expression of flavour, or pour gently for a cleaner glass with less deposit. Either way, Homok is built to brighten up whatever moment you're in.
