Annolium is made from Chardonnay (60%) and Pinot Noir (40%) grapes grown in the Les Petites Trouillères and Larrivas vineyards, located between 380 and 450 metres above sea level on the slopes of Puy de Tobize and Puy de Corent, in the heart of the volcanic Auvergne region. The terroir combines clay-limestone and basalt colluvium, a mosaic of soils offering mineral tension, salinity and precise aromatic expression. The vineyard, cultivated organically and inspired by biodynamics, is harvested entirely by hand to preserve the integrity of the berries and the identity of the plots.
The cuvée is vinified naturally, without oenological inputs, using indigenous yeasts and with a total SO2 content of less than 30 mg/l. Direct pressing produces a delicate blanc de noir, marked by the finesse of Pinot Noir and the brightness of Chardonnay. Fermentation takes place in stainless steel vats, followed by mixed ageing in stainless steel and 225-litre barrels (15% of the volume), adding texture and complexity while preserving freshness and purity. This minimalist but precise work fully highlights the volcanic identity of the Puy de Dôme and the very refined signature of Domaine des Trouillères.
Camille and Mikaël Hyvert arrived in Auvergne in 2015, after a journey that took them from Bordeaux to Chile and Argentina, from vineyard to vineyard.
