Carambolage II blends Gamay, Pinot Noir and Chardonnay from the Les Trois Fontaines, La Petite Côte, Larrivas and Les Petites Trouillères plots, located between 380 and 450 metres above sea level on the slopes of Puy de Corent and Puy de Tobize. The terroir is composed of basaltic colluvium and clay-limestone, a typical combination in volcanic Auvergne. This geology brings tension, freshness and structure, while giving the red grape varieties a spicy and mineral profile, and the Chardonnay an aromatic purity marked by the high altitudes.

Vinification is natural, with direct pressing for Chardonnay, whole bunch maceration for Gamay and Pinot Noir, followed by fermentation in concrete vats. The Chardonnay is then aged for twelve months in 225-litre barrels before final blending with the reds, followed by a further six months in 1,000-litre stoneware jars. The wine is unfiltered and its total SO2 remains below 30 mg/l. This gentle approach preserves pure, juicy fruit, while revealing a fresh tension and precise volcanic minerality, the signature of Domaine des Trouillères.
