Éruption 2024 is made exclusively from Gamay grapes harvested by hand from the Les Petites Trouillères, Chemin des Martres and Les Tiodets plots, located between 380 and 450 metres above sea level on the slopes of Puy de Tobize, Puy de Marmant and Puy de Corent. The terroir is composed of clay-limestone mixed with basalt colluvium, a geological signature typical of the Puy de Dôme. These volcanic soils give the Gamay tension, spice, freshness and a dark mineral resonance that directly influences the wine's aromatic profile and structure.
The vinification process is entirely natural, with semi-carbonic maceration of whole bunches, fermentation in fibre vats and six months' ageing in 1,200-litre stoneware jars. No inputs are used, except for a total SO2 content of less than 30 mg/l if necessary. This gentle and precise work highlights the crisp fruit of Gamay and the mineral depth of the volcanic soil, while retaining a lively energy and a refined structure. Ageing in jars brings finesse, purity and a tight grain that supports the wine's natural freshness.
