Matthias Orsett settled in 2021 on the steep slopes of Fully, where he cultivates 1.3 hectares of terraced vines at an altitude of between 460 and 870 meters. After studying viticulture and oenology at Montmorot in the Jura region, he refined his approach working with iconic winemakers such as Emmanuel Houillon and Pierre Overnoy.
The light, stony soils lie on a bedrock of gneiss and granite. The vines are cultivated by hand, according to the principles of organic farming (BioSuisse certification), using gentle pruning methods typical of the Valais region: rotating goblets and spindles.
To supplement his production, Matthias also sources organic grapes from Fully, Saxon, and Miège.
The wine is made in his cellar in Port-Valais, a few kilometers from the vineyard. Around ten single-varietal wines are produced here: Fendant, Petite Arvine, Païen, Chardonnay, Cornalin, Gamay, Pinot Noir, Garanoir, and Gamaret.
Fermentation is carried out without yeast cultures, using only indigenous yeasts. The wines are aged for 9 to 30 months in vats or old Burgundy barrels. Bottling is carried out without fining or filtration. A small amount of sulfur may be added depending on the sensitivity of the wines.
