The Soléra cuvée is a blend of seven Champagne grape varieties, the three classics (Chardonnay, Pinot Noir, Pinot Meunier) and four "forgotten" varieties (Arbane, Petit Meslier, Pinot Blanc, Pinot Gris), from a plot planted in the north-west of Les Riceys, in the Côte des Bar. The limestone and marl soil, typical of the region's Kimmeridgian terroirs, brings finesse, minerality and depth of character.
The vinification combines tradition and audacity: after gentle pressing, natural fermentation with indigenous yeasts and ageing in old barrels, the wine enters a cycle of perpetual reserve according to the solera method. Each year, new juice replaces part of the barrels, creating a wine that is constantly evolving, blending youth and maturity. The cuvée is bottled Brut Nature, without dosage, with minimal use of sulphites to preserve the purity of the fruit and structure.
The solera method, borrowed from Iberian fortified wines, is extremely rare in Champagne. It allows a portion of older wines to be kept permanently, creating continuity of evolution and complex depth, while taking advantage of the unique character of forgotten Champagne grape varieties. The choice of rare grape varieties such as Arbane and Petit Meslier further underlines Olivier Horiot's desire to preserve the wine-growing heritage of the Côte des Bar and to offer a signature champagne, rooted in its terroir. The result is a multi-dimensional cuvée, capable of surprising and evolving slowly over time. A wine for lovers of depth, complexity and authenticity!
