Sève En Barmont 2017 reveals a very light golden colour and fine bubbles, full of elegance. The nose combines poached pear, white peach, fresh raspberry, toasted hazelnut and a touch of wet stone. Sève En Barmont 2017 is a Blanc de Noirs made from 100% Pinot Noir, harvested manually from the "En Barmont" plot, located in the village of Les Riceys on the Côte des Bar. The soil, which is Kimmeridgian clay-limestone, combines red clay and hard limestone on a south-east facing hillside. This, combined with the more southern climate of the Aube region, produces ripe, concentrated grapes with great mineral potential.
The vinification is carried out in a very natural way: spontaneous fermentation in used oak barrels, without the addition of sulphur, filtration or fining. The wine is aged on fine lees for about ten months and then bottled in July 2018. It remains on racks for 65 months before being disgorged in January 2024. No dosage is added, which accentuates the purity of the fruit and the expression of the terroir.
