TOC 3 is part of Nadia Verrua's experimental range at Cascina Tavijn, and this 2022 rosato illustrates exactly what that series is about: taking a well-known variety and approaching it from an unexpected angle. Ruché is almost exclusively produced as a full red in Piedmont, where it is entitled to its own DOCG, Ruché di Castagnole Monferrato, and is prized for its distinctively intense floral and spiced aromatics of rose, geranium, black pepper and dried orange peel.
By vinifying it as a rosé in stainless steel, Nadia preserves those aromatic qualities in their most transparent form, with reduced extraction and no wood influence to obscure them. The result is a dry, precise rosé at 13% ABV, pale in colour but generous on the nose, with red fruit, alpine flowers and a clean, slightly saline finish. Bottled without fining, filtering or added sulphites, in keeping with Cascina Tavijn's no-intervention approach throughout.
The small village of Scurzolengo, in the hills above Asti, has been the home of the Verrua family for many generations. The parents, Teresa and Ottavio, have been growing grapes and hazelnuts here for decades, in the purest Piedmontese tradition. Nadia Verrua joined them about twenty years ago, perpetuating the family style...
