The TOC series at Cascina Tavijn functions as Nadia Verrua's experimental range. Wines made from varieties that sit outside the estate's Monferrato heartland of Grignolino, Ruché and Barbera, but which Nadia tends with the same organic rigour and minimal-intervention approach applied across all her work.
TOC nr.5 is made entirely from Vermentino, a grape more commonly associated with Sardinia and the Ligurian coast, but one that thrives here on the soft, sandy hillside soils of Scurzolengo at around 300 metres elevation. Vinified in stainless steel with spontaneous fermentation, no fining or filtration, and no added sulphites, the result is a dry white that is precise and fruit-forward: expect white peach and lemon zest on the nose, a firm, saline palate, and a clean bitter finish typical of the variety.
At 12.5% ABV, it drinks with real lightness and focus. This magnum format is ideal for the table, generous enough for a crowd, and a format that suits a wine this fresh and food-friendly.
