What Time Is Too Late To Go To Bed 2023 is a blend of Müller-Thurgau, Bacchus, Johanniter and Muscaris sourced from organically farmed vineyards in Franconia. Each variety contributes a distinct character, resulting in a layered yet highly drinkable wine.
The vinification is gentle and precise: Bacchus undergoes around seven days of skin maceration, while the other grapes are only briefly macerated before pressing. Each component is fermented and aged separately in a mix of stainless steel and used barrels for nearly a year before blending.
On the nose, the wine shows floral aromatics, citrus zest and subtle herbal notes. The palate is light and vibrant, combining crisp acidity, a touch of texture and a distinct mineral edge.
Unfiltered and made with minimal intervention, the wine remains fluid and expressive, offering a balanced and versatile interpretation of Franconian terroir.
