Wermoutte #8 is the first red vermouth released by Wein Goutte, made from a base of red wine blended with house-distilled schnapps and a wide range of herbs and botanicals grown or foraged around the estate in Franconia.
The majority of the ingredients come from the winery’s own garden, where aromatic and medicinal plants are cultivated year-round. Seasonal harvesting shapes the final profile, with spring herbs like elderflower and mint, and summer additions such as basil, rosemary, sage and lavender.
A touch of honey brings balance to the natural bitterness, resulting in a vermouth that is both lively and layered, with around 10 g/L of residual sugar and a fresh, herbal intensity.
On the nose, it shows complex herbal aromatics, dried citrus peel and floral notes. The palate is bitter, savoury and gently sweet, with a vibrant, mouthwatering finish that reflects the diversity of the botanicals.
Designed as a versatile apéritif, Wermoutte can be enjoyed on ice, with tonic, or as a base for cocktails such as a Negroni or Manhattan.
Wein Goutte, a nomadic project of Emily Campeau and Christoph Müller, she a Quebecer, he a German, who met during the harvest at Franz Weninger's in Austria in 2018.
