The 2013 BISTRØTAGE Affinage Prolongé ++ vintage opens with a deep and surprising nose combining prunes, quince, brandied fruit, fruit paste and slightly oxidative notes. With aeration, hints of candied quince, sweet spices and toasted almonds bring complexity and maturity. On the palate, the attack is lively and the structure is straightforward, but the wine quickly evolves into a full-bodied, almost velvety texture. The third release from the 2013 vintage, following the classic BISTRØTAGE cuvée and the extended ageing cuvée, is BISTRØTAGE Extended Ageing ++ B.13. A 100% Pinot Noir blanc de noirs, from plots in the Chervey cru in the Côte des Bar region, in localities such as "Les Copies", "Val Hérard" and "Bicheret". The grapes are harvested by hand and vinified in a combination of vats and oak barrels. Fermentation takes place with natural yeasts, followed by malolactic fermentation.
The originality of this cuvée comes from its long ageing "sur lattes" (on racks) for more than ten years in the cellar before disgorging, which gives it a highly evolved profile, almost like a wine for ageing. No dosage is added, and there is no fining or filtration. The prolonged ageing process allows for elegant oxidative aromas, a dense texture and a marked mineral character. This is a rare, deep champagne with a strong personality, almost more wine than sparkling wine, designed to last and develop over time...
