FRANÇØISE² FF.10 displays an elegant minerality and airiness. On the nose, the purity of Pinot Noir reveals aromas of ripe apple and juicy pear, complemented by a salty freshness and a slight hint of iodine. On the palate, the texture is delicate, the bubbles fine, the acidity well present and the minerality incisive. The finish is long, with notes of wet stone, candied citrus fruits and a lingering salinity. A very great champagne, sober, straightforward, with a disturbing finesse, a pure expression of the Côte des Bar terroir...
The grapes come from the village of Chervey, in the Vilaine Vallée de l'Arce in the Côte des Bar. The vines are cultivated organically on clay-limestone soils typical of the region.
100% spontaneous fermentation, no added sulphur, no fining or filtration. The clear wine was aged for around a year in barriques and demi-muids. Bottling took place in October 2011, then the wine was aged for over 11 years on slats before disgorging in December 2022. No dosage, Brut Nature.
